When it comes to desserts that require little effort yet grace both the table and the palate with such class, you’ll be hard-pressed to find a dish as impactful as Trollkrem.
Literally translating to ‘Troll cream’, it is mind-blowing how a dessert that consists only of four ingredients and can be made in a matter of minutes, can deliver such a powerful and truly memorable flavor.
What is Trollkrem?
In essence, Trollkrem is a lingonberry mousse-like dessert, made by whipping lingonberry jam and raw egg whites together with a little vanilla and a pinch of salt until you achieve a thick and airy, mouse-like consistency. It really is that simple.
What are Lingonberries?
Known for their deep, tart, and sour flavor, lingonberries are native to the snow forests of the Northern Hemisphere. Hence, you will find wild lingonberries growing on the evergreen shrubs of forests in Canada, Alaska, North America, and Scandinavia.
Loaded with nutrients, these berries are hugely popular in Scandinavian cuisines, especially Swedish and Norweigian. They are close in flavor to cranberries but taste unique in their own right.
This recipe calls for lingonberry jam and, while you’ll struggle to find lingonberry products in most supermarkets, we found lingonberry jam in Ikea. So if you’re planning to make this super simple dessert, you’ve now got a valid excuse to schedule in a trip to everyone’s favorite Swedish department store!
Ingredients
To make our Trollkrem recipe, you only need the following four ingredients:
- Pasteurized Eggs – 2 egg whites
- Lingonberry Jam – 200 grams (7oz)
- Vanilla Extract – 1/2 tsp
- Salt – a pinch of salt
You will also need the following equipment:
- Electric Hand Mixer
Step-by-Step Instructions
Step 1 – Separate the egg whites from the yolks (save the yolks for another recipe). Add the egg whites, lingonberry jam, salt, and vanilla extract to a large mixing bowl.
Step 2 – Using an electric hand mixer, whisk the ingredients in the bowl for around 5-10 minutes, until you achieve an airy, mouse-like consistency, about 4 times as big in volume as the volume of the ingredients you started out with.
Step 3 – Serve the Trollkrem in a tall glass or bowl and garnish to decorate.
What to Serve with Trollkrem
Fruits always pair well with this delightful dessert, but we’ve opted for a sprig of mint for its fresh aroma and a welcome dash of grassy green color to complement the candy pink of the cream.
Texturally, Trollkrem is a mesmerizing dish. Each spoonful treats you to a thick and airy mouse-like dollop of cream that fizzes away on the tongue.
The flavor is sharp and tart, yet balanced with the delicate sweetness of the vanilla. It truly is a unique tasting dessert and one that is a shoo-in to wow family and dinner guests you serve it to.
Note that this recipe uses raw egg whites (we recommend using pasteurized eggs). However, if you’re not comfortable consuming raw egg whites, try other similar Norwegian recipes, such as Multekrem (which is a mixture of cloudberries and cream).
Trollkrem is a classic example of how even a small number of ingredients can be used to create wonderful tasting dishes with the right care and combination.
We absolutely love this Norweigan classic, not only for its unique flavor and texture but also for how simple it is to prepare.
